A few years back while attending the Bacon Jam Festival in Fort Myers, Florida we had the opportunity to taste a Hardwood Smoked Sausage served from a BBQ team from Texas. This sausage had a deep and smoky flavor with a great snap! Something we had not experienced living in the North. We were familiar with smoked Brats and other sausages like Kielbasa but this was quite a bit different. After returning home we went to work on trying to create our version of a traditional southern style Hardwood Smoked Sausage.
